Roasted Potatoes with Bacon!

 Hey guys, hope you had an excellent weekend. Sorry I have been MIA, but those who are friends with me on FB know I was battling a serious flu. I even finished a whole dosage of medication and my Doc. had to give me a different second dose because the flu wasn't giving up the fight! All the fresh juice and liquids I was consuming helped and I am finally back on my feet! 
So yesterday, I decided I wanted to cook potatoes and bacon for a late lunch with hubby. I didn't particularly want to make a whole meal, but something easy and delicious. So I decided to make potatoes and bacon. To be honest, I decided to just wing it (the recipe that is). I am a BIG fan of the Food Network and sometimes the chef in me just gets overly excited and just decide to whip things I think will taste good.
  So I just boiled some potatoes then threw them on the grill together with 5 cloves of garlic (chopped), freshly ground pepper, 1 sliced green pepper and 1 sliced red pepper. I pan-fried the bacon then added it to the potatoes. It is important to drizzle the oil used to fry the bacon as it will add more flavour to the potatoes. To serve, I just grated some cheddar cheese and voila! Hubby absolutely loved it but requested me to try add onions next time.... yummers!
